This recipe is based on the omelette made by Sydney in the show The Bear! :) Make it with whatever you want inside its an omelette dude. In the show, she uses boursin cheese, chopped chives, and sour cream and onion chips to garnish. I make it like this and its VERY good. 3 large eggs Butter Salt Pepper (to taste) 1. PREHEAT YOUR PAN! Medium high heat. 2. Beat your three eggs until they're combined. OPTIONALLY, you can strain your eggs. This removes all the solids from the eggs and makes the omelette smoother, if you're hungry now just skip it. I've also seen people say to leave out your egg slurry out until it's orange instead of yellow but idk. 3. Place butter in pan and let it melt. Tilt around the pan so that the butter coats the bottom. 4. Pour in your eggs. You're gonna shake the pan and tilt around the eggs (just like the butter) so you can fully coat the bottom. With a spatula, disrupt the center, more egg will fill in the little gaps and then you'll have more omelette to eat (#science). 5. The egg should be a teeny bit runny in the middle but the edges should be set. Now is when you can add your stuff. YUMMY. Salt and pepper here. 6. Take the pan off the heat and start flippin :) Fold one side of your omelette, and then kinda shimmy the other side onto your plate WHILST STILL FOLDING. ~ Nice things to put in your omelette: cheese (any), potato, bacon, chorizo, (caramelized) onions, really any veggies, leftovers, hot sauce or ketchup, fried rice (omurice) ~ adapted from Katherine Sasser: https://katherinesasser.com/sydneys-french-omelette/
